Winemaking:
Harvest of grapes in the second half of October, crushing and destemming, fermentation and maceration with the skins for about ten days at a controlled temperature of 27°C. Separation of the must and malolactic fermentation. Aging in stainless steel tanks for about six to eight months with batonnage.
Sensory characteristics:
Red color with intense purple hues and notes of blackberry jam, plum, violet and with a final note of vanilla, warm and wrapping to the palate.
Food Pairing:
Excellent with first and main courses meat-based and with cold cuts and cheeses.
