Winemaking:
Harvest of the grapes in the second half of October, crushing and de-stemming, fermentation and maceration with the skins for about ten days at a controlled temperature of 27°C. Separation of the juice and malolactic fermentation. Aging in stainless steel tanks for about six to eight months, with battonage.
Sensory characteristics:
Red wine with purplehues and with pronounced sourness of blackberry jam, plum and violet with a final note of vanilla, warm and enveloping to the palate.
Food Pairing:
Excellent with first and second courses of meat and cold cuts and cheeses.
Serving temperature: 18-20°C
Alcohol: 14% Vol
